Mexican Taco Pasta Dish and Salsa




















Many have been asking for this recipe, so here it is.

Ingredients:
1 can cheddar cheese 1 pack mild taco seasoning
1 box mutli colored rotoni 1/2 jar salsa (I make my own)
Seasoning( tonys, onion and garlic powder, Mrs. dash and Nature's)
1 lb ground meat (I use lean) 1/2 block Velveeta

Directions: preheat oven to 350
1. Cook pasta as directed on box
2. brown ground meat in a skillet, once brown do not drain, add taco seasoning pack and mix well
3. In another poet melt can of cheddar cheese and Velveeta on low (this will take a few minutes)
4. once melted add seasoning to cheese (season to your taste)
5. mix in ground meat into pot with cheese until well mixed
6. drain noodles and place an even layer into a baking dish.
7. Next layer pour cheese mixture to cover noodles
8. Next pour a salsa layer
9. repeat steps 6-8 in layers until everything is gone (my always is only two layers)
10. place in oven for 15 minutes
11. this step is optional, but place a layer of tortilla chips, Mexican cheese, place back in oven for 5 more minutes
12. serve


My salsa recipe:
Ingredients:
2 cans pepper diced tomatoes 2 cans rotel 1 Japloneo (I use the jar kind and guess)
2 Tsp honey 2 cloves garlic (again I use the jar kind) splash of lime juice
1 small onion Seasonings (clintaro, tonys, garlic and onion powder, Mrs. Dash and Nature's)


Place all (or 1/2 at a time) into a food processor for 30 sec and your done!
